Coco's Sake
At Coco’s, each fish is carefully treated in advance, through aging, curing, kombu - jime, or light searing allowing its natural flavor to fully develop. The sushi rice is adjusted daily in temperature and seasoning to complement the fish, and each piece is served already balanced, no soy sauce is needed, please enjoy it as the chef intended.
