At Coco’s, each fish is carefully treated in advance, through aging, curing, kombu - jime, or light searing allowing its natural flavor to fully develop.
The sushi rice is adjusted daily in temperature and seasoning to complement the fish, and each piece is served already balanced, no soy sauce is needed, please enjoy it as the chef intended.
Our sushi chef Tenzin believes: Great sushi is not complexity, but precision, from the temperature and seasoning of the rice to the cut and aging of each fish every detail is carefully considered.
